Wild caught marine fish are commonly infected with anisakid nematodes lodging in the intestinal linings or in the fish muscle. One of the most commonly found nematode parasites in marine fish is Anisakis simplex. During production of mince from the muscle of wild caught Anisakis-infected fish, the larvae would be disrupted during mince production. Any bacteria within or on the surface of such larvae are during the mincing process evenly distributed throughout the mince, and could thus possibly affect the spoilage rate of the final products. To explore if or how any bacteria associated with muscle-invading Anisakis larvae may affect the spoilage rate of fish mince, a controlled storage trial was conducted. Fillets of farmed Atlantic cod (Gadus morhua), exclusively fed on dried and heat-treated compound feed and hence expectably free from Anisakis larvae, were aseptically collected and homogenised. Fish mince aliquots were added different volumes of Anisakis homogenate based on larvae which were freshly sampled from the visceral cavity of NE Atlantic blue whiting (Micromesistius poutassou). The volumes of added parasite homogenate (parasite(+)-samples) reflected different infection intensities from 15 (low) to 50 (high) larvae per 100 g fish fillet, representing an actual Anisakis intensity range in the flesh of blue whiting. The samples were kept at 4 °C for 15 days and subjected to microbiological, sensory and chemical evaluation at 3 days intervals. Upon visual examination and plate count measurements (PC) on Iron Agar Lyngby (IAL), the samples without any parasite additives (no[parasite]) spoiled differently and more rapidly than any of the parasite(+)-samples. However, H2S-producing bacteria were only recorded in the latter samples, which were also the only ones that showed increased levels of the spoilage indicator substance trimethylamine (TMA). Moreover, the parasite(+)-samples changed their sensory characteristics at a later stage compared to the no[parasite]-samples. Although some cultures of H2S-producing bacteria were found on IAL, molecular identification by PCR-DGGE of the actual bacteria was not conclusive. Psychrobacter sp. which has no or only little spoilage activity, was identified in all samples until trial day 9, but was probably outgrown by the stronger spoilers Pseudomonas fluorescence/fragi and Photobacterium phosphoreum. Thus, and somewhat unexpected, our findings indicate that – under the present trial conditions – fish mince contaminated with bacteria which originate from Anisakis larvae, spoiled less rapidly than samples without any parasite-related bacteria present. Moreover, the shelf-life of fish mince was apparently not reduced by the presence of bacteria transferred to the mince by Anisakis larvae.  相似文献

介绍中化弘润石油化工有限公司600 kt/a催化汽油加氢装置加氢催化剂RSDS-21,RSDS-22首次进行反应器外再生、重生及工业应用情况。经过器外烧炭再生及重生后,RSDS-21中碳质量分数由4.21%下降至0.52%,硫质量分数由5.60%下降至0.51%;RSDS-22中碳质量分数由4.90%下降至0.55%,硫质量分数由5.20%下降至0.84%,重生后催化剂颗粒完整。各项开工数据表明,经过硫化处理后,催化剂活性恢复较好,基本达到装置初次开工时催化剂活性水平,各项产品指标达到国标要求。反应在低温状态下进行,有利于降低产品汽油辛烷值损失,延长催化剂使用寿命。此次催化剂再生、重生效果较好,达到生产要求。  相似文献

In this study, proximate and fatty acid composition in the edible flesh of eight underutilized and five commercial freshwater fish species were compared in order to evaluate the potential of these fish for development of functional value-added fishery products. The lipid content (% dry weight basis) of investigated fish species ranged from 3.44 to 9.25 in underutilized and 3.73–7.68 in commercial species. In comparison with underutilized fish species, commercial species had higher levels of protein (P < 0.05). The high proportion of EPA+DHA was found with Goldfish (524 mg/100 g flesh), Wels (422 mg/100 g flesh), and Crucian carp (354 mg/100 g flesh), all of which belonged to underutilized group. All studied fish (save Lenkoran) showed values higher than the minimum recommended DHA/EPA value (0.45). The ratios of n-6/n-3 found in this study were much lower (save Goatfish) than those cited as a harmful value (4.0 as the maximum value). The PUFA/SFA value of the present fish samples was higher at 1.57 for Goatfish, 1.02 for Lenkoran, 0.68 for Wels, all of these fish belonging to the underutilized group. The highest atherogenic and thrombogenicity index values were generally obtained for commercial species. It seems in respect of comparability of these lipid quality indicators, the underutilized fish species could be highly recommended as an important source of polyunsaturated fatty acids and Max-EPA products for humans consumption.  相似文献

The effect of heat treatment and the presence or absence of fish skin on the volatile composition of Senegalese sole muscle was studied. The volatile profile of Senegalese sole at different storage periods was also evaluated. All samples were analysed by HS-SPME–GC–IT/MS and subjected to sensory evaluation. As expected, cooking enhanced the production/liberation of volatile compounds. Fish with the skin present, after cooking, had higher levels of sulphur compounds, 2-nonanone, ethyl octanoate and lower contents of hexanol and heptanol than skinned fish; moreover, the samples with the skin had a better overall sensory acceptability. During storage, changes on the volatile composition of Senegalese sole samples were found. The major differences were obtained after 2 weeks of storage. Compounds such as hexanal, heptanal, octanal, decanal, (E)-2-hexenal, (E)-2-decen-1-al, (E,Z)-2,6-nonadienal, benzaldehyde, 4-ethyl-benzaldehyde, 1-penten-3-ol, heptanol and (E)-2-octen-1-ol decreased after 2 weeks of storage, and other compounds, such as 3-methyl-1-butanal, 2-methyl-1-butanal, 2-heptanone, dimethyl trisulphide, dimethyl tetrasulphide and 2-methyltetrahydrothiophen-3-one increased. Mislabelling of seafood products has been documented in numerous countries for over three-quarters of a century. With a trend towards increased consumption of seafood, the informed consumer demands accurately labelled products that provide full disclosure of composition. DNA barcoding can be used to accurately identify a seafood product to species based on its genetic signature, and so provides a means to test the authenticity and accuracy of seafood labelling. This can be especially useful for products such as fillets which have few or no unambiguous identifying characters, and can easily be mislabelled. We investigated labelling accuracy in seafood retailers in Tasmania, Australia. Thirty-eight seafood products were obtained from seafood retailers, sequenced for the barcoding gene region cytochrome oxidase subunit 1(CO1), and subsequently identified to species level by querying GenBank and Barcode of Life Data Systems (BOLD) DNA sequence records. Results were compared with standard fish names (SFN) prescribed under the Australian Fish Names Standard (AFNS) and FishBase. Of the 38 samples, none were deemed to have been mislabelled under Australian regulation, although in some cases naming discrepancies and ambiguity may cause confusion for some consumers. Our work, while reflecting high standards in Tasmanian seafood, highlights the need for mandatory standard labelling across all seafood products so as to eliminate any possible misrepresentation.  相似文献

Three alternate dying methods—vacuum drying (VD), vacuum microwave drying (VMD), and pulse-spouted vacuum–microwave drying (PSVMD)—were examined experimentally for their potential as an industrial scale technology to produce granules of fish. Drying kinetics as well as key quality parameters such as expansion ratio, texture, color, sensory characteristics, and microstructure of crispy granules produced by these drying techniques were examined. Results showed that the drying time is reduced with an increase in microwave power level and with reduced pressure as expected. The quality of the granules is affected by the drying method and the operating parameters employed. Granules obtained using PSVMD at a microwave power density of 6.0 W/g displayed optimal quality required for the commercial product accepted by consumers.  相似文献
